Holiday Baking with Mrs. Claus
 

Mrs. Claus has shared her favorite Holiday Cookie recipes that she bakes year round for Santa & the Elves at the North Pole. She's sure you and your family will love them as much as they do.

 

Ginger Cookies

 

INGREDIENTS & DIRECTIONS:
 

Melt 3 sticks margarine.

 

Add: 

 

  • 1/2 cup molasses

  • 2 cups sugar

  • 2 eggs

 

Beat well.

 

Sift together and add to the above mixture:

 

  • 4 cups flour                                     

  • 1 tsp.  ginger

  • 4 tsp. baking soda                          

  • 1 tsp. cloves

  • 2 tsp. cinnamon

 

Refrigerate the dough for several hours.  Then make the dough into small balls, roll in sugar.  Bake at 350 degrees until firm or brown - about 8 to 10 minutes.  This recipe makes approximately 5 dozen cookies!

 

Soft Sugar Cookies

INGREDIENTS:

  • 2-3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup unsalted butter, room temperature

  • 1 cup + 2 tbsp granulated sugar

  • 2 tbsp light brown sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 1/4 cup sugar (additional for rolling)
     

DIRECTIONS:
 

  1. Preheat oven to 350°F. Line baking sheets with parchment paper. Set aside.

  2. Combine the flour, baking soda, baking powder and salt in a medium sized bowl and set aside.

  3. Cream the butter and sugars together in a large mixing bowl on medium speed until light in color and fluffy.

  4. Add the egg and mix until well combined.

  5. Add the vanilla extract and mix until combined.

  6. Add the dry ingredients and mix until the dough is well combined.

  7. Create 1-1/2 tablespoon sized balls of cookie dough. Gently roll into a ball, then roll each ball in the additional sugar to coat. Set the balls on the baking sheet.

  8. Bake the cookies for 7-8 minutes. Remove just before the edges begin to turn golden. Don’t over bake. The cookies will fall some as they cool.

  9. Remove the cookies from the oven and allow to cool on the baking sheet for 4-5 minutes before transferring to a wire rack to cool completely.

Chocolate Chip Cookies

 
INGREDIENTS:

 

  • 3/4 cup butter flavored Crisco                                              

  • 1-1/4 C firmly packed light brown sugar

  • 2 tbsp milk                                                             

  • 1 tbsp vanilla                                                               

  • 1 egg

  • 1-3/4 cups flour                                                           

  • 1 tsp salt

  • 3/4 tsp baking soda                                                    

  • 1 C semi-sweet chocolate chips

  • 1 C pecan pieces (optional) IF you do not use nuts, use 1-1/2 cups of semi-sweet chocolate chips

DIRECTIONS:

 

  1.  Heat your oven to 375 degrees.

  2.  Combine butter flavored crisco, brown sugar, milk and vanilla in a large bowl.

  3. Beat at medium speed with an electric mixer until creamy.

  4. Beat egg into creamed mixture.

  5. Combine flour, salt and baking soda and mix into creamed mixture until just blended.

  6. Stir in chocolate chips and pecan pieces.

  7. Drop rounded tablespoonfuls (about 2 measuring tbs) of dough 3 inches apart onto an ungreased baking sheet.

  8. Bake at 375 degrees for 8 to 10 minutes for chewy cookies (cookies will appear moist - DO NOT OVERBAKE) or 11 to 13 minutes for crisp cookies.

  9. Cool cookies on a baking sheet for 2 minutes.  Remove to foil on countertop.
     

This cookie recipe makes about 2-1/2 dozen cookies!
 

Cranberry-Walnut Oatmeal Cookies

INGREDIENTS:

  • 1 cup all-purpose flour

  • 1 tsp. ground cinnamon

  • ½ tsp. each of baking powder and baking soda

  • ¼ tsp. salt

  • ½ cup margarine or butter

  • ½ cup sugar

  • ½ cup brown sugar, packed

  • 1 large eff

  • 1 tsp. vanilla

  • ¾ cup chopped walnuts (optional)

  • ½ cup dried cranberries
     

DIRECTIONS:
 

  1. Heat oven to 375 degrees.  

  2. Have cookies sheets ready. 

  3. Mix flour, cinnamon, baking powder, baking soda and salt. 

  4. Put butter, sugars, egg and vanilla into a large bowl.  Beat with electric mixer until creamy.  With mixer on low speed, gradually add flour mixture.  

  5. Beat just until blended.  

  6. Beat in oats, cranberries and nuts. 

  7. Roll heaping tablespoons of dough into balls.

  8. Place two inches apart on ungreased cookie sheet.  

  9. Bake 10-12 minutes until cookies are light golden brown.  

  10. Cool on cookie sheet 1 minute before removing to wire rack to cool completely.

Here is the 2020 Holiday Music Video from Robbie Boothe, Donovan Farrell, Phillip Michael Parsons, Donald Quade, Tara Rae, Wes Ryce,  LaKeisha Smith, Brandi Sydnor, and Catrina Vitez! In the video, these talented local performers sing Amazing Grace. It's such a beautiful rendition of this amazing song. You'll also recognize some great Leonardtown Landmarks featured in the video.
